(We’ve heard some fun things happen at other times of the year, but that’s neither here nor there.) Festive season is a time to come together, to gather with friends and family while basking in a warm glow of gratitude, love and joy. Who can resist that? The City of Lights transforms into a winter wonderland during the holiday season – and that includes Four Seasons Hotel George V, Paris, where for 20 years Artistic Director Jeff Leatham has been setting the scene with artful floral displays and decorations. From December 16 to January 8, treat your sweet tooth to a festive, epicurean pop-up, where a delectable collection of pastries by Chef Michael Bartocetti is paired with an equally exceptional collection of wines. This year, you can also step behind the scenes of holiday magic in a series of master classes with Chef Christian Le Squer and Sommelier Eric Beaumard. Chocolate à la carte in Jackson Hole

Hot chocolate is serious business this time of year – just ask any 7 year old (or 67 year old, for that matter) you know. And few do it better than Four Seasons Resort and Residences Jackson Hole. Their specialty hot chocolate cart wheels in daily to spread sweetness and joy, offering five different types of specialty chocolate to choose from, ranging from the sophisticated Valrhona 70% Guanaja and Valrhona 64% Manjari to classic milk chocolate. For 100 years, London’s Ten Trinity Square has stood in the heart of the city, overlooking the Tower of London, Tower Bridge and the River Thames. The historic beaux arts building served first as the headquarters of the Port of London Authority and then as the site of the inaugural reception for the General Assembly of the United Nations in 1946. Today, it’s home to Four Seasons Hotel London at Tower Bridge – the perfect home base for discovering London’s storied past. And while the focus today is on entertainment, modern sumo matches still honour many of the sport’s religious roots: Wrestlers clap their hands to attract the attention of the gods and stamp their feet to drive away evil spirits, and the dohyo – the clay wrestling ring where the wrestlers compete – is symbolically purified with salt. Ginger is incredibly good for you, even when it’s crystallized and sugary, but when I eat this, all I’m thinking about is home.”

My favourite season is autumn, which according to tradition is the season to nourish your body. The best way to do that? Seared duck breast, caramelized foie gras and pear coulis, served with caramel miso sauce. Since then, lychee has become one of my favourite fruits, and I’m always reminded of this moment when I eat it.”

A New Season in Napa: Fall Fashion
Inspired by Wine Country

California’s Napa Valley is ideally suited for Cabernet Sauvignon grapes: The region offers a sunny, warm climate; good drainage; and volcanic soils that add an earthy, rich complexity to its wines. At the new Four Seasons Resort and Residences Napa Valley, where the vineyard is protected by the Palisades mountains and oak-covered hills, world-class winemaker Thomas Rivers Brown and his team at the on-site Elusa Winery have carefully designed and planted it to intensify the grapes’ flavour. Take part in the winemaking process, from harvesting grapes to blending and ageing the wine, or learn about Calistoga’s unique terroir during a tasting session – the Resort provides the most complete grape-to-glass experience in Napa.
