Marco Fregnan

Chef de Cuisine
Raised in a family that owned and operated an Italian restaurant, Marco Fregnan gained an early appreciation for seasonal ingredients and culinary craft. He began his career in Michelin-starred kitchens and spent nearly a decade in leading restaurants and hotels in Singapore. He moved to Kyoto in 2024 and was appointed Chef de Cuisine of EMBA KYOTO GRILL in February 2026, bringing a refined approach that showcases local ingredients through charcoal grilling and low-temperature techniques.

The Summer Reverie Afternoon Tea presents a refined harmony of French and Japanese sensibilities, inspired by the brilliance of Baccarat. Featuring traditional French pastries from the Lorraine region paired with Kyoto’s seasonal ingredients, this elegant experience is highlighted by luscious summer peaches and a radiant palette of Baccarat red. Enjoy indoors or on the terrace overlooking our Hotel’s serene pond garden, Shakusui-en. JPY 9,800 per person.
