Nicholas OwenExecutive Chef
Local really is the order of the day at Four Seasons Hotel Kyoto, where Executive Chef Nicholas Owen has been the “sole foreigner” on the culinary team since joining in 2017. For a collaborative craftsman such as Chef Nicholas, it’s easy to see the appeal of the Japanese approach to food. Precise and focused in the kitchen, his young team has as much respect for one another as for their producers and ingredients. Many hail from the 180-plus Michelin-starred restaurants in and around Kyoto, but Chef Nicholas’ flexible approach to new ideas and creative solutions has rapidly put Four Seasons Hotel Kyoto on the map as well.
“I love how in tune the Japanese are with their local producers and how it creates more of an appreciation for the food both within the kitchen and at the table.”
