Much of the inspiration for the menu at Cinder House at Four Seasons Hotel St. Louis comes from Chef Gerard Craft’s love of South American cuisine – his beloved childhood nanny, Dia, introduced him to its flavours. Today, many of the wood-fired dishes at the restaurant are an ode to Dia. “As an adult, I now recognize how much care she put into everything that she made,” Craft says. “Dia had the ability to evoke a sense of comfort from simple, fresh ingredients, and that’s something I hope always translates on the Cinder House menu.”

One of Dia’s most comforting dishes is only available by request: Dia’s Cheese Bread, or Pao De Queijo, was on Cinder House’s opening menu but now is a secret favourite among Cinder House regulars. The warm, pillowy pieces of fresh bread are best served with prosciutto and lardo or as the perfect accompaniment to a warm meal after a long day.

For a twist on the traditional Asian dish, this Seafood Ramen combines local Bahraini prawns, black sea bass and clams alongside more traditional garnishes like a shoyu egg, fresh scallions and sesame.

It took 18 months for up-and-coming Bahraini Chef Lulwa Sowaileh at Four Seasons Hotel Bahrain Bay to perfect her ramen noodles, experimenting with different textures and techniques until she was satisfied with the result. A change from the traditional dim sum and authentic robata-style grilled items she normally creates at re Asian Cuisine, a Wolfgang Puck restaurant, the dish is served with dashi broth – made by slow-cooking fish bones, shitake mushrooms, bonito flakes and kombu and seasoned with tamari and sea salt – fresh prawns, black sea bass and clams, and garnished with a shoyu egg, crispy shallots, lime, cilantro, fresh scallions and sesame.

His pappardelle, for example, is topped with a silky sauce made of tofu instead of cream or cheese, while his tartare swaps out beef with toothsome, hearty tomatoes, which give a similar meaty effect. For guests who prefer more rural recipes, however, Chef Emad Ebeid doesn’t mind crafting his koshari, a hearty blend of lentils, rice and macaroni topped with a spicy tomato sauce and fried onions, or his rich oxtail stew.

“These are very ethnic folk dishes, mostly served in areas that are difficult to commute to by our guests, and also require special culinary preparations,” Ebeid says. “The challenge is producing a folk dish without compromising Four Seasons culinary perfection.”

To make each cake, a ring of the local fruit is mixed with pancake batter, brown sugar and clarified butter, then baked for 10 minutes before the whole thing is inverted onto a plate. How to Island-Hop Your Way Through Hawaii


Adventure travellers Dan Moore and Mitch Oates spent two weeks chasing thrills while soaking up the distinctive beauty of four Hawaiian islands.

“Hawaii was much more diverse and adventure-filled than we had expected,” Moore says. “Every island has its own style, different from the next – including the landscapes. We don’t think you have truly experienced Hawaii until you have visited at least three islands to get fully immersed in what it has to offer.”

From home bases at Four Seasons Resort O‘ahu at Ko Olina, Four Seasons Resort Maui at Wailea, Four Seasons Resort Lanai and Four Seasons Resort Hualalai, the pair paddled, swam, dived and hiked their way through paradise – taking time out to unwind and savour the delights of their temporary island homes.

Moore and Oates’ first stop was Oahu, where they relieved jet lag with a little pool time. Refreshed and ready for island life, they dialled up the action with canoeing, hiking through secluded areas of Kualoa Ranch and pursuing the ultimate underwater ocean adventure.

From poolside to countryside on Maui

When figuring out what to do in Maui for the 24 hours they had, Moore and Oates decided they wanted to experience as much of the island as possible. With a guide, they took a 12-hour photographic journey to some of Maui’s most scenic locations. “The drive through the island was just as picturesque as the waterfalls and taro farms we visited,” Oates says. “Simply breathtaking.”

“Lanai is the adventure island, with anything you want to do,” Moore says. During their stay, the pair tackled horseback riding, freediving, hiking, and mud-running in an ATV and a jeep. “Even the golf course offers motorized skateboards that you can put your clubs on instead of a golf cart,” he says. “Everything about this island is amazing, from the brand-new, tech-savvy Four Seasons Resort Lanai to remote areas that almost look like you are in an episode of Survivor.”

On Hualalai, their last stop, Moore and Oates enjoyed a mix of thrills and relaxation. “We actually didn’t leave Four Seasons Resort Hualalai,” Oates says. “It literally has everything you could possibly think of, including turtles scattered along the beach and dolphins just off the beach.”

A Scenic Sojourn Through Southern California

Though Michael Murphy is a project manager by trade, the lensman’s eye for photography is what earned him a winning spot in the Focus on Four Seasons Instagram contest.

The New Hampshire–based talent, along with his wife Liz, recently returned from a six-day escape to the West Coast, where they soaked up the sun, sand and hospitality offered by Four Seasons Resort The Biltmore Santa Barbara and Beverly Wilshire, Beverly Hills, A Four Seasons Hotel.

“Both properties were very impressive, but the professionalism of the staff was what stood out,” Murphy says. “Our experience started and ended with a genuine interaction, which enhanced the mood and set the tone.”

Now that the two are back home, Murphy is dishing up all the picture-perfect destination snapshots he captured along the way.

In Pictures: Island Life in Hawaii

After being named one of three winners in the Focus on Four Seasons Instagram contest, Ontario-based attorney Kristen Holman took a break from her high-pressure legal job for a six-day vacation on the islands of Hawaii with her boyfriend, Rob Frasca. Little did she know that they would be returning from the once-in-a-lifetime adventure as a newly engaged couple.

From the moment the pair touched down, the staff at Four Seasons Resort Maui at Wailea went above and beyond to ensure the couple’s expectations were exceeded – upgrading their rental car and stocking it with beverages and blankets as well as creating a custom itinerary of what to do in Maui.

“The hospitality of the staff members set the tone for a memorable day,” recalls Holman of their drive to the top of the Maui’s Haleakala crater. “We witnessed the fascinating sunrise at the summit, followed by a hike down the Sliding Sands Trail, where we got engaged!”

Over the course of three days, the couple experienced the cuisine, culture and activities offered at the Resort in Maui, then prolonged their Hawaiian excursion with a three-day stay at Four Seasons Resort Hualalai.

“Hawaii is an unbelievable blend of adventure and tranquillity,” she says. “We expected stunning landscapes and a laid-back atmosphere, but were blown away by the spectrum of activities available to those that want to do more than simply kick back.”
