Chef JoonSu is an explorer at heart, with a deeply rooted connection to the sea. When he is not experimenting with Asian-inspired recipes, he enjoys diving excursions during which he draws inspiration. His signature style places emphasis on high quality ingredients, balance and technique.

“Great food is born out of memories and emotion. I fell in love with cuisine when I prepared a soup from my mom saw how happy she felt after tasting it. I strive to create emotion through simple yet excellently prepared Asian dishes.”
