to Travel With Intention

A stay in Costa Rica is a feast for the senses: sounds of ocean waves rolling in and out and animals rustling through the tropical dry forest, cool water hitting your skin as you swim beneath a thundering waterfall, the scent of the salty breeze. Tucked between two unspoiled beaches on the verdant north Pacific coast, Four Seasons Resort Peninsula Papagayo, Costa Rica is surrounded by rugged yet tranquil natural beauty that eases into your psyche, connecting you to this lush paradise. Our senses feed our brain information about the world around us, but if we let them, they can tell us much more.

“Your body is always speaking to you,” says Georgina Miranda, social entrepreneur, coach, activist and mountaineer athlete. “The question is, are you going to listen to it?” She recently explored this question during a visit to Costa Rica with Patrick Janelle – the creative director and world traveller behind A Guy Named Patrick – to record a podcast on personal experiences and perspective on exploring the world through our senses.

For Miranda, who is also an energy practitioner and yogi, tapping into her senses and using them to keep her attention on the present moment is a big part of her mindfulness practice and of the way she moves through the world. In 2008, she set out to accomplish the Explorer’s Grand Slam – climbing the highest peak on each continent and skiing the last degree to the North and South poles – to raise funds for two non-profits combating gender-based violence in the Democratic Republic of Congo. Only 15 women in the world have ever completed the challenge, and Miranda is well on her way to adding her name to that list.

She has six of the Grand Slam summits done, including Mount Everest, and 10-plus years of far-flung adventures under her belt. And as she meets the challenges one by one, she’s seeing the world – and her place in it – in a new light. “There’s a moment when travelling that you realize you will never be the same because of what you’ve experienced,” Miranda says. “You have felt, touched, tasted and been immersed in a new reality, and so now your own reality is different. I felt this when I reached the top of Everest, and I felt it eating my first gelato when I was 21 years old and in Rome.”


Feeling is Believing

As she forges deeper connections to the destinations she visits and the people she meets, Miranda has a new-found appreciation for the life-changing benefits of travel. “It’s been in the recent years that [I realized] my travelling has changed so much. I no longer want to see the world – I want to feel the world,” she says. “And that really shapes how I travel.”

For most of us, the seeing part of travel is easy enough. But how does one actually go about feeling the world? “It’s utilizing all of your senses, but then also the energy of a space,” Miranda says.

It’s one thing to read about the biodiversity that exists on an island like Costa Rica and research the birds you’ll see, the animals you’ll encounter or even the average size of the swells you’ll surf. But it’s not until you’re walking among the towering trees on the Trail of Giants, looking up to see monkeys jump from branch to branch, or you’re sitting beneath a twinkling canopy of stars and sipping a Cabernet Sauvignon aged with a real meteor, that your recognition of the experience transforms it into something you understand not just with your mind and your senses, but with your entire being.

“My travels have helped me feel more connected and in touch with humanity and the earth,” Miranda says. “Time with pristine nature – no matter where I am in the world – and learning about new people is a gift. It offers a sense of renewal in my soul unlike anything else. It’s like coming home to a part of myself that was forgotten.”

The Power of the Present

Even if you don’t practice mindfulness, tapping into the feel and energy of the destination you’re in is something every traveller typically aims for. “I think one thing [you can do] is to just be fully present,” says Miranda, who is an energy practitioner and yogi. “If you’re travelling long distances, you get to a place and you might be so caught up in the excitement of the list of things you want to go see and do that you don’t give yourself the opportunity to actually just arrive and really be there.”

She suggests giving yourself 20 to 30 minutes upon arrival to be present in the moment. Don’t have anywhere to go or anything to do except observe. “It’s this art of being versus doing,” Miranda says. “And I think Western culture really encourages us to constantly be doing, but you miss out on so much magic.”

Stepping Into the Flow

When we can live with intention and travel with intention, it’s all the easier to experience that magic that Miranda talks about. We can choose a purpose for a trip – to get a break from work, recharge or strengthen bonds with loved ones – but she cautions travellers not to get too caught up in ticking boxes and checking off items on to-do lists.

“I think every experience can be abundant. And somehow, you’re limiting that abundance with a list,” she says. She knows first-hand the feeling of disappointment that comes with not being able to do every single thing she had planned for a trip, and how it can get in the way of focusing on the beautiful things she did do and the people she connected with along the way.

The unofficial motto you’ll hear almost everywhere you go in Costa Rica is “pura vida.” The literal translation into English is “pure life,” but in reality it’s much more than that. It’s an attitude, a way to approach life that says “it’s all good,” both when things are going your way and when they’re not – especially then. It’s an outlook that perfectly lends itself to staying present and being open to new connections and discoveries – and the benefits that life has to offer right here, right now.

Having travelled so much over the years, Miranda has a motto, too. “It came to me around 25, I think, and it’s really shaped everything,” she says. “The extraordinary is always possible. Never limit yourself or life’s potential.” And the extraordinary, she notes, is not someone else’s extraordinary. It’s yours. It’s whatever that means to you.

Can Free Your Creativity

When you sit down for a tea ceremony at Four Seasons Hotel Kyoto, you’re bound to hear the Japanese saying ichi-go ichi-e (literally, “one time, one meeting”). It’s a gentle reminder that every single moment – no matter how small – is a unique opportunity, never to be repeated.

For photographer and creative director Dave Krugman, noticing and capturing those moments, like his bamboo forest image above, is a way of life.

 


“One of the reasons I love to make photographs is because I find memory to be a very fleeting thing,” says Krugman. “For me, a photograph is a stimulus for a cascade of memories. And every time I look at a photo I’ve taken, it takes me back to that moment and the feelings I was having and the people I met and the environment I was in. That’s why photography is such an important part of my life.”

In Kyoto, Four Seasons helped introduce Krugman to a variety of new people, environments and experiences: A Hotel guide led him on a tour of a 1,000-year-old bamboo forest, and the Concierge arranged a visit to a local lantern workshop, where artisan lantern masters taught him how to carefully layer thin sheets of paper over a frame to build his own mini lantern. Krugman also sat down at Four Seasons Hotel Kyoto with Poppy Jamie – an author, entrepreneur, and founder of mindfulness app Happy Not Perfect – to record a podcast sharing more about his personal journey and perspective on how travel is essential to a creative life.

“I’ve learned that everything we look at, there’s a craftsman behind it,” he said.

Known for his moody yet vibrant cityscapes and street photography, Krugman cites travel as one of the biggest influences on not only his art, but on his relationship with the world around him. “There is nothing more inspiring and invigorating than travel,” he says. “It always shows me that the world is so much larger than we imagine, so much more diverse. Witnessing this complexity and the vastness of the world is a humbling feeling, and it inspires me. Photography allows me to connect more deeply with all I see and all I experience.”

“I try to leave a lot of breathing room for spontaneity and serendipity, because my favourite moments are when something happens, the path kind of diverges, and I’m exposed to this thing that I couldn’t have planned even if I wanted to,” he says.

This doesn’t just apply to travel, but to the creative process – and to some of the most worthwhile experiences. “The best experiences in my life have been things that are just outside my comfort zone,” says Krugman.

Taking Time to Make New
Connections in Florence

Piacere!” “Pleased to meet you!” During a recent visit to Four Seasons Hotel Firenze, that’s the sliver of my rusty college Italian that I find myself returning to – and truly feeling – most often. I’m here to explore, with record-breaking globetrotter Jessica Nabongo, the idea of “Take the Leap, Take Your Time.” How will we use the gift of 366 days that this 2020 leap year has brought us? Talking with her, as we’re recording the first episode of the new Four Seasons “Take the Leap” podcast, I’ll soon discover that for Jessica, the answer lies not in places but in people.

Meeting Jessica

When I meet Jessica, the first black woman to visit all 195 U.N.-recognized countries and document her journey, I quickly learn two facts about her: 1) She is always cold; on set, we wrap her in Hotel bathrobes to shield her from breezes. 2) She is one of the warmest people I’ve ever encountered. Her travel quest, completed last October, was propelled largely by the connections she made and the conversations she had along the way. “Home isn’t a place; it’s people,” she says. She has a gift for making each place she visits feel like home, for herself and for whoever she happens to meet.

As for her physical home, in Detroit, she tells me she’s downsizing. After her record-breaking journey she moved into a smaller place, and she’s now in the midst of scaling down her “stuff.” She’s giving away closetfuls of clothes, piles of luggage; I get the sense that her years of nimble travel have made her a pro at discarding baggage of all types, whether it’s a suitcase or a notion of a place that no longer feels useful.

It seems to me that Jessica was born to travel. While the past few years have seen her briskest pace (136 countries just from 2017 to 2019), she’s been travelling internationally since age 4. She’s never experienced motion sickness or food poisoning. I’m behind on sleep, since I’m rarely able to nap on planes, trains or automobiles, and when I try to stifle a yawn, she laughs – saying that when she travels, she sleeps literally like a baby: “Strap me into my seat and start moving the vehicle and I’m out!” One of her goals, she says, is to help other travellers push past their perceived boundaries, in travel and in life.

How does she make meaningful connections with people she meets, I ask, when they don’t share a common language? She was inspired, she says, by a taxi driver she met during her travels. As she always does, she struck up a conversation with him that ran much deeper than the weather. Discussing their travel experiences, he described his surprise when his wife had recently shared a long, happy afternoon with a small child on a beach, to the delight of the youngster’s parents, during a vacation where she did not speak the local language. “I speak with my heart,” she told her husband, “not with my mind.” Ever since, Jessica has set out to do the same. It’s a philosophy she’ll bring to each moment of our visit in Florence.

Meeting Luca (and Giotto)

Dai! Dai! Dai!” urges Luca Campinotti, encouraging his truffle-hunting dog to “Come on!” In response, the eager, curly haired (and, it must be noted, adorable) Giotto trots off into the woods, sniffing and crackling his way through the underbrush as Jessica and I watch. The Lagotto Romagnolo breed, says the AKC, is alert and intelligent, with an excellent nose and strong endurance – and is also, as demonstrated here in this forest in Forcoli, very attached to its owner. It’s a bond Luca notes as crucial to the process, and one that reminds me of the border collies on my family’s farm, so strongly connected to my father that when herding livestock they could translate the slightest change in his tone or expression into a fresh course of action.

During our truffle excursion – guided by Savini Tartufi, around an hour’s drive from the Hotel – we’re eager to see if Giotto will earn a treat from Luca, either “a little cookie” or “a big cookie,” depending on his performance. In ancient Rome, Luca says, each truffle was thought to be a gift from the gods, the result of a lightning strike sent down from the heavens. Now, though, I can’t help but feel as if each truffle is actually a gift from Giotto, since he (being no fool) has a taste for the tubers as well as for dog biscuits.

As we walk the land where the Savini family has gathered truffles for four generations – another parallel, I realize, with my family’s farm back home – we watch for a sign. Giotto’s father, says Luca, barked when he made a discovery; Giotto, however, wags his tail to flag a find. At the first hint of a wag, Luca is there, to finish the dog’s digging (and pre-empt any sampling) with a tool specially designed to excavate the treasure.

The truffle smells delightfully of earth and garlic. It’s a bianchetto, or “whitish,” specimen, this not being the season for the ultimate prize of tartufi bianchi. But, as Luca reminds us, all truffles here were once considered mere “food for pigs” until the world discovered their charms. Truffles from the Piemonte region were first to claim attention – and then company patriarch Zelindo Savini proved that Tuscany, too, had the mild climate, the soil rich in mineral salts, to produce top-quality truffles. I envy those pigs, I think, as I inhale the aroma again.

Luca shows us a yellow capsule, which I recognize as the vessel that holds the toy in the centre of a chocolate Kinder Sorpresa egg. There are holes punched into it and truffle bits inside. It’s hidden as an exercise for training the next generation, Luca says. Savini’s Lagotto Romagnolo puppies, currently immersed in lessons with their trainer, may or may not turn out to have Giotto’s talent, but if they develop half of his passion or Luca’s – for the land, for the hunt, for the truffles – they’ll be lucky dogs indeed.

Meeting Chef Mollica

For Executive Chef Vito Mollica, the culinary master behind the Hotel’s Michelin-starred Il Palagio, Luca and the Savini family are not just suppliers, but friends. As Jessica and I chat with him during our hunt with Giotto, we learn that Vito was born in Italy’s Basilicata region, took the opportunity as a boy to go to cooking school, and soon fell in love with the kitchen. He went on to work with Four Seasons in Milan and Prague before arriving in Florence for the Hotel’s opening in 2008; he’s been sourcing truffles from Savini ever since.

It’s fitting, I think, to feast on truffles at Four Seasons Hotel Firenze. During the Middle Ages, they were shunned, thought to be too exotic, too tempting an aberration in the soil, to be anything but the work of witchcraft. But then, in the 16th century, Florence’s Caterina de’ Medici helped repopularize the truffle; she’s said to have arrived in France for her wedding to Henry II with truffles and other Italian produce in tow. By 1585, fellow Medicis were at home in the palazzo that is now the Hotel: first Alessandro de’ Medici (who became Pope Leo XI), and then his sister Costanza.

The truffles Giotto found, then, join a long culinary tradition here. But first, we need to prepare them. For me, stepping into a kitchen, let alone the kitchen of a Michelin-starred restaurant, means stepping out of my comfort zone. But the vast majority of travellers (95%) say they’re most likely to step out of their comfort zone while on vacation, according to a global survey commissioned by Four Seasons. So I decide to embrace this new adventure.

Back at the Hotel, when Chef Vito hands over the knife so Jessica and I can cut freshly made pasta into tagliatelle-size ribbons, I manage not to injure myself or others, and when he adds Romanesco broccoli purée and Jessica shaves one of our truffles over the top, the result is glorious, a testament to Vito’s devotion to simplicity and quality. He then shows us how to prepare turbot with local vegetables, while another patient member of the kitchen team teaches us the tricks of risotto – topped with more heaps of shaved truffle.

As I fork up bite after bite, I recall another fact I learned from the Four Seasons survey: More than half of travellers like to cook or eat new foods on vacation, and say the experience stays with them after their trip. I know I will never forget this dinner.

Food, like home, is about people. It’s about the people who produce it (thank you, Luca and Giotto), the people who prepare it (thank you, Chef Vito) and the people who share it with us (thank you, Jessica). “This island is meant for exploring,” says Chef Olivier Barré, “and the picnic is a delicious excuse to pause and enjoy the view.” Guests can stroll or cycle to one of dozens of spots, on the edge of turquoise waters or shaded by coconut groves, that simply beg for a gingham blanket. Lunch, neatly packed into a bike-friendly wicker basket, is completely customizable, though bites like pesto chicken and local cassava or banana chips are perennial favourites, not to mention the kiwi Danishes. While you dine, keep an eye out for Aldabra giant tortoises – more than 100 live on the island.

Four Seasons Resort and Residences Vail launched its picnic program last summer and it’s back by popular demand. “The Colorado-inspired meals are a convenient addition to mountain biking or hiking adventures,” says Kate Allan, Guest Relations Supervisor. Guests can earn their lunch with a walk along one of the Four Seasons recommended routes, such as a hike to placid Piney Lake or a tour through aspen groves to scenic Booth Falls. The backpack spread includes a selection of portable delectables such as the Resort’s popular house-made granola and sandwiches of shaved meats – pancetta, calabrese and salami, among others – sourced from the state where you’re enjoying them.
