to Travel With Intention

A stay in Costa Rica is a feast for the senses: sounds of ocean waves rolling in and out and animals rustling through the tropical dry forest, cool water hitting your skin as you swim beneath a thundering waterfall, the scent of the salty breeze. Tucked between two unspoiled beaches on the verdant north Pacific coast, Four Seasons Resort Peninsula Papagayo, Costa Rica is surrounded by rugged yet tranquil natural beauty that eases into your psyche, connecting you to this lush paradise. Our senses feed our brain information about the world around us, but if we let them, they can tell us much more.

“Your body is always speaking to you,” says Georgina Miranda, social entrepreneur, coach, activist and mountaineer athlete. “The question is, are you going to listen to it?” She recently explored this question during a visit to Costa Rica with Patrick Janelle – the creative director and world traveller behind A Guy Named Patrick – to record a podcast on personal experiences and perspective on exploring the world through our senses.

For Miranda, who is also an energy practitioner and yogi, tapping into her senses and using them to keep her attention on the present moment is a big part of her mindfulness practice and of the way she moves through the world. In 2008, she set out to accomplish the Explorer’s Grand Slam – climbing the highest peak on each continent and skiing the last degree to the North and South poles – to raise funds for two non-profits combating gender-based violence in the Democratic Republic of Congo. Only 15 women in the world have ever completed the challenge, and Miranda is well on her way to adding her name to that list.

She has six of the Grand Slam summits done, including Mount Everest, and 10-plus years of far-flung adventures under her belt. And as she meets the challenges one by one, she’s seeing the world – and her place in it – in a new light. “There’s a moment when travelling that you realize you will never be the same because of what you’ve experienced,” Miranda says. “You have felt, touched, tasted and been immersed in a new reality, and so now your own reality is different. I felt this when I reached the top of Everest, and I felt it eating my first gelato when I was 21 years old and in Rome.”


Feeling is Believing

As she forges deeper connections to the destinations she visits and the people she meets, Miranda has a new-found appreciation for the life-changing benefits of travel. “It’s been in the recent years that [I realized] my travelling has changed so much. I no longer want to see the world – I want to feel the world,” she says. “And that really shapes how I travel.”

For most of us, the seeing part of travel is easy enough. But how does one actually go about feeling the world? “It’s utilizing all of your senses, but then also the energy of a space,” Miranda says.

It’s one thing to read about the biodiversity that exists on an island like Costa Rica and research the birds you’ll see, the animals you’ll encounter or even the average size of the swells you’ll surf. But it’s not until you’re walking among the towering trees on the Trail of Giants, looking up to see monkeys jump from branch to branch, or you’re sitting beneath a twinkling canopy of stars and sipping a Cabernet Sauvignon aged with a real meteor, that your recognition of the experience transforms it into something you understand not just with your mind and your senses, but with your entire being.

“My travels have helped me feel more connected and in touch with humanity and the earth,” Miranda says. “Time with pristine nature – no matter where I am in the world – and learning about new people is a gift. It offers a sense of renewal in my soul unlike anything else. It’s like coming home to a part of myself that was forgotten.”

The Power of the Present

Even if you don’t practice mindfulness, tapping into the feel and energy of the destination you’re in is something every traveller typically aims for. “I think one thing [you can do] is to just be fully present,” says Miranda, who is an energy practitioner and yogi. “If you’re travelling long distances, you get to a place and you might be so caught up in the excitement of the list of things you want to go see and do that you don’t give yourself the opportunity to actually just arrive and really be there.”

She suggests giving yourself 20 to 30 minutes upon arrival to be present in the moment. Don’t have anywhere to go or anything to do except observe. “It’s this art of being versus doing,” Miranda says. “And I think Western culture really encourages us to constantly be doing, but you miss out on so much magic.”

“If you’re open enough, you can let a lot of wonderful things come into your life when you travel,” says Miranda. “It snaps you out of autopilot and it gives you the opportunity to wake up to yourself again.”

Stepping Into the Flow

When we can live with intention and travel with intention, it’s all the easier to experience that magic that Miranda talks about. We can choose a purpose for a trip – to get a break from work, recharge or strengthen bonds with loved ones – but she cautions travellers not to get too caught up in ticking boxes and checking off items on to-do lists.

“I think every experience can be abundant. And somehow, you’re limiting that abundance with a list,” she says. She knows first-hand the feeling of disappointment that comes with not being able to do every single thing she had planned for a trip, and how it can get in the way of focusing on the beautiful things she did do and the people she connected with along the way.

The unofficial motto you’ll hear almost everywhere you go in Costa Rica is “pura vida.” The literal translation into English is “pure life,” but in reality it’s much more than that. It’s an attitude, a way to approach life that says “it’s all good,” both when things are going your way and when they’re not – especially then. It’s an outlook that perfectly lends itself to staying present and being open to new connections and discoveries – and the benefits that life has to offer right here, right now.

Having travelled so much over the years, Miranda has a motto, too. “It came to me around 25, I think, and it’s really shaped everything,” she says. “The extraordinary is always possible. Never limit yourself or life’s potential.” And the extraordinary, she notes, is not someone else’s extraordinary. It’s yours. It’s whatever that means to you.

Can Free Your Creativity

When you sit down for a tea ceremony at Four Seasons Hotel Kyoto, you’re bound to hear the Japanese saying ichi-go ichi-e (literally, “one time, one meeting”). It’s a gentle reminder that every single moment – no matter how small – is a unique opportunity, never to be repeated.

For photographer and creative director Dave Krugman, noticing and capturing those moments, like his bamboo forest image above, is a way of life.


“One of the reasons I love to make photographs is because I find memory to be a very fleeting thing,” says Krugman. “For me, a photograph is a stimulus for a cascade of memories. And every time I look at a photo I’ve taken, it takes me back to that moment and the feelings I was having and the people I met and the environment I was in. That’s why photography is such an important part of my life.”

In Kyoto, Four Seasons helped introduce Krugman to a variety of new people, environments and experiences: A Hotel guide led him on a tour of a 1,000-year-old bamboo forest, and the Concierge arranged a visit to a local lantern workshop, where artisan lantern masters taught him how to carefully layer thin sheets of paper over a frame to build his own mini lantern. Krugman also sat down at Four Seasons Hotel Kyoto with Poppy Jamie – an author, entrepreneur, and founder of mindfulness app Happy Not Perfect – to record a podcast sharing more about his personal journey and perspective on how travel is essential to a creative life.

“I’ve learned that everything we look at, there’s a craftsman behind it,” he said.

Known for his moody yet vibrant cityscapes and street photography, Krugman cites travel as one of the biggest influences on not only his art, but on his relationship with the world around him. “There is nothing more inspiring and invigorating than travel,” he says. “It always shows me that the world is so much larger than we imagine, so much more diverse. Witnessing this complexity and the vastness of the world is a humbling feeling, and it inspires me. Photography allows me to connect more deeply with all I see and all I experience.”

After travelling the world twice over, Krugman can attest to one of the most essential components of a successful trip, no matter the destination: Keeping an open mind.

“I try to leave a lot of breathing room for spontaneity and serendipity, because my favourite moments are when something happens, the path kind of diverges, and I’m exposed to this thing that I couldn’t have planned even if I wanted to,” he says.

This doesn’t just apply to travel, but to the creative process – and to some of the most worthwhile experiences. “The best experiences in my life have been things that are just outside my comfort zone,” says Krugman.

In Kyoto, that could mean immersing yourself in the world of geiko and maiko – kimono-clad entertainers who perform traditional song and dance – at an ozashiki asobi dinner in the Gion geisha district. Raising a Foodie: 7 Tips on Travelling with Picky Eaters

One of our first family holidays was to an island in the Caribbean — an easy hop from New York City with plenty of kid-friendly beach activities and local spots serving up fish-of-the-day and curried rôtis. Unfortunately, at the time we arrived, our toddler son was going through a culinary beige stage and rejecting any new flavour. So instead of risking mealtime tantrums and eye-rolls from our fellow (generally honeymooning) diners, we’d resigned ourselves to a drama-free menu of cereal, cheese sandwiches and cheese pasta.

It was on a boat trip out to the cays that we had a breakthrough. While my son and I splashed around in the sea, my husband and our captain dived for conch, which we took to a deserted beach to prepare in the afternoon sun. When we’d cleaned, prepped and chopped the catch into a citrusy ceviche, our captain handed a few pieces to my son, who ate them without ceremony.

“Was that nice?” I asked, trying to hide my utter joy. “Mmm,” he replied, then went back to building a sandcastle.

A gourmet feast it wasn’t, but I couldn’t help feeling proud and relieved that he’d at least tried something new.

Novelty is one thing you’re absolutely guaranteed to encounter on the road. I use it to lure my boy from his comfort zone on all our travels, along with a host of other tricks to encourage and foster adventurous eating. Read on for my seven best tips, from crafting culinary treasure hunts on city trips to perfecting the foodie sleight of hand wherever you are in the world.

Get a taste before you travel

Kids are creatures of habit, so take some of the surprise out of their vacation menu and introduce new dishes at a local restaurant before you travel. This is easy in cities like New York and London, where you can travel from Little Italy to Chinatown in a few blocks. But you can also set up a restaurant night at home and have the kids research ingredients, draw up a menu and help with some of the prep.

With younger children, get them excited about weird and wonderful food in general and pick up a copy of food critic Joshua Daniel Stein’s beautifully illustrated Can I Eat That?, which is stuffed full of foodie facts and addresses important questions like “Do eggs grow on eggplants?”

A visit to a local food market on Day One is a great way to familiarize your kids with the types of ingredients they’ll encounter over the course of the trip.

When visiting London, for example, combine a trip to the South Bank’s Tate Modern museum and kid-favourite London Eye Ferris wheel with a stop at Borough Market. Here, kids can note regional edibles like hand-collected scallops from Dorset, Cumbria’s prized Galloway beef and prize-winning Cheddar cheeses. As you order new dishes throughout the trip, make a fun game out of having them point out any special ingredients they recognize.

Embrace street food culture


Street eats are perfect family fare: fast, casual and available at all hours. In Istanbul, you can pick up a bagel-like simit from one of the carts on virtually every street corner to stave off hungry tantrums, while in Hanoi, children can enjoy the independence of ordering for themselves thanks to the simple picture menus used at most stalls.

The key is that the dining room can be the sidewalk, a scenic walking tour or a bench nearby, which means you won’t have to worry about disturbing diners at the next table. And since street food doesn’t call for proper table manners, you and your family can relax while eating, instead of continually ensuring that everyone is sitting quietly in their chairs.

Combine your street food with a picturesque view by finding a great local picnic spot, like the Royal Botanic Gardens in Sydney, Australia, or Fort Point in San Francisco, California.

Try edible sightseeing

Kids quickly tire from back-to-back rounds of sightseeing, but combining the big attractions with a pre-plotted restaurant crawl around a new city is a perfect way to see the sights and keep everyone fed and happy.

In Hong Kong, Michael Lau and Jacky Cheung, managers at three-Michelin-star Lung King Heen restaurant at Four Seasons Hotel Hong Kong, suggest a dining crawl that takes in many of the city’s iconic dishes: Milk tea at Lan Fong Yuen, wonton soup at Mak’s Noodle, dim sum at Tim Ho Wan, tofu custard at Kung Wo Dou Bun Chong and egg tart at Tai Cheong Bakery.

“The key to discovering Hong Kong street food [and thus the country’s culture] is to be a bit adventurous,” says Lau.

In Paris, score serious brownie points on a small-group chocolate walking tour of the city’s best chocolatiers and patisseries (tastings included), or keep it classic in New York City with a pizza crawl around Manhattan. Four Seasons Hotel New York Concierge Austin Herzing suggests long-time favourite Don Antonio by Starita, which is just four blocks from Times Square and therefore a prime pick for pre- or post-theatre dinners. Farther downtown, Herzing recommends Marta, a popular spot that puts you within snapping distance of the Flatiron Building and busy Madison Square Park, as well as Chef Mario Batali’s upscale pizza restaurant OTTO — perfect after exploring the boutiques and cafés of the nearby West Village.

Get the kids cooking


As parents of picky eaters will attest, playing chef is one sure-fire way to get kids out of their comfort food zone. “Having children involved in food preparation really helps make food less of the enemy,” explains Paulette Lambert, Director of Nutrition at Four Seasons Hotel Westlake Village, which offers a variety of cookery classes for young ones. “Most kids want to fit in, so they are generally much more adventurous in class than at home.”

At Four Seasons Hotel Abu Dhabi budding chefs don small aprons and chef’s hats and learn the basics of making breads, pastries and other delicacies at the Hotel’s market-inspired Crust restaurant. At Four Seasons Resort Koh Samui, the Kids For All Seasons programme gives young ones the chance to make anything from Thai pancakes to cookies.

Don’t skip the posh restaurants

Travelling with children who are picky eaters doesn’t mean giving up memorable dinners at upscale restaurants. In fact, parents should take advantage of kids’ early-bird mealtime and score a reservation before rush hour at a local hot spot. Add some theatre to the occasion by choosing a restaurant with an open-plan kitchen or chef’s counter, so kids can engage with the team and appreciate just what goes into preparing their meal.

At Four Seasons Hotel Austin’s fine-dining restaurant TRIO, children can order from a dedicated kids’ menu (from a PB&J to grilled white fish with vegetables and rice) and dine with custom dishes and silverware that were specially designed for little hands. Four Seasons Hotel London at Park Lane offers two children’s menus at its upscale Italian restaurant, Amaranto – the Il Bambino menu for early eaters and one for older diners, with teen-favourite paninis, pasta, pizza and gelato.

Alternatively, seek out a family-focused dining club like Nibble + squeak, which hosts popular parent-and-tot meals at some of New York, London and Washington, DC’s best restaurants. The most recent lunch in NYC was a sold-out takeover of Chef Enrique Olvera’s white-hot Cosme restaurant, and there are upcoming events at the President Obama-approved Vermillon in DC, and London’s award-winning Modern Pantry.

Serve their favourites, with local spice

Como se dice french fries?” Ideally, you don’t say it at all, but if your children won’t stray from their favourites, find the local equivalent. At Four Seasons Hotel Buenos Aires, for example, Chef Patricia Ramos at Nuestra Secreto restaurant recommends tempting kids with the pacu croquettes, small fillets of fried fish that will seem very familiar to lovers of fish fingers.

Playing translator can be key to getting kids on board with strange-sounding foods. You might get a “no” to trying chicken roti in the Caribbean, for example, but not if you suggest ordering the chicken wrap – its exact equivalent. Or pitch the “cheese sandwich” instead of an arepa in Colombia, or “pasta” over dumpling-like manti in Turkey.

And remember, wherever you are in the world, ice cream (gelato, kulfi, dondurma, mochi ice cream) is always a hit.

Tips From Expert Travel Photographers

Globetrotting photographer Robb Gordon is often asked what kind of camera he owns. “Nobody asks a writer what kind of pen he uses,” says Gordon. “I don’t really care about the camera. I care about the image.” Photographer Martin Morrell echoes Gordon’s sentiment: “One doesn’t need an expensive camera in order to capture moments that please—[they] can be shot on a smartphone.”

Take advantage of Mother Nature’s lighting at sunrise and sunset

Photographers live for what’s known as the golden hour—those short windows of time after sunrise or before sunset when the light gives anything you point your camera at a rich, golden glow.

“Whenever I can, I shoot during these times for the softest tones and most dramatic lighting,” says Dana Neibert, who is known for his environmental and landscape photography like the shot of Lanai, pictured above. “It’s so easy to make a nice image at those times.”


Photography tips and tricks: Shooting sunrise in Paris

Lesley Murphy, photographer and travel blogger at The Road Les Traveled, agrees that lighting can make or break a photo. “I shot this during sunrise in Paris from the Penthouse at Four Seasons Hotel George V, Paris,” she says. “Needless to say, it was worth the 6:00 am wake-up call. I wanted to make sure it had the best lighting.”

Murphy adds that a remote-control shutter release, tripod and wide-angle lens are helpful when shooting with a DSLR during this golden hour. “But even if you’re taking photos with an iPhone,” she says, “having something in the foreground will help bring out the various shades of the sunlight.”

The Palm Grove Pool at Four Seasons Resort Hualalai provided a brilliant reflection for Kirsten Alana’s snapshot of the Hawaiian sunset.

Photographer Kirsten Alana, the eye behind the travel photography blog Aviators and a Camera, also finds herself looking for different ways to capture “cliché” shots. “During sunset at Four Seasons Resort Hualalai, most people went to the beach to capture the moment,” she says. “Instead, I headed to the Resort’s pool so that I could use its large reflective surface as a giant mirror, doubling the impact. The pool gave a water effect, but was smoother and reflective.”

To recreate this photo, Alana suggests focusing on and exposing for the reflection rather than the reflected object, since the light between the two can vary greatly.

While photographing The Bar at Four Seasons Resort Rancho Encantado Santa Fe, Don Riddle uses a shallow depth of field to highlight a design detail while still conveying the mood of the entire place.

Photographer Don Riddle has spent the last 15 years travelling the globe with camera in hand. To add interest to otherwise simple snapshots, he suggests playing with depth of field. “This technique is useful to soften the other elements in the scene,” instructs Riddle, “and bring the focus to the subject you want the viewers to see.”

To achieve this effect, Riddle shoots in aperture priority mode or in manual mode with the aperture setting at the smallest f-number. This style of photo can also be achieved, although it’s more difficult, on a smartphone. “Focusing on something very close to the camera will cause the background to go out of focus. Touching the focus option on your smartphone will force the camera to focus on the subject in the foreground. The closer you are to the subject, the more out of focus the background will be.”

Sean and Jennifer Nguyen captured Dubai’s city lights coming to life from the 124th floor observation deck of the Burj Khalifa, the world’s tallest building.

Sean and Jennifer Nguyen are the husband-and-wife duo behind the popular Instagram handle Kobechanel, a photographic chronicle of the couple’s travels around the world. A quick scroll through their stream reveals that the Nguyens have a penchant for shooting above destinations using a wide-angle lens, as evidenced by this night-time view of Dubai.

“Taking in the vastness of this desert city is best seen from as high above as possible,” says Sean. “Especially at sunset, seeing the transition of the city from sun-baked to moonlit is remarkable.” To create a night-time aerial photo with this same sense of motion, the Nguyens recommend using a tripod and long exposures.

Focusing on this artisan’s hand allowed Rachelle Lucas to capture the intricate batik technique that’s so cherished within Balinese culture.

Capturing local culture beats at the heart of Rachelle Lucas’ culinary and travel blog, The Travel Bite. But as a photographer, she is always pushing herself to go beyond portraits of locals and shine a light on the details that speak to the subject’s unique way of life. “If you enjoy getting shots of people and culture,” she says, “get a different angle and physically move your body to make the photos more interesting.”

While touring the Batik Popiler II Factory in Bali’s Tohpati village, for example, Lucas focused on a woman’s hand rather than the larger picture to illustrate the skill required by the complex batik technique. “It’s a lengthy process of drawing, dying the fabric and then removing the wax. It made me appreciate the designs much more, and is something that a wide shot couldn’t capture.”
