Nicolas Lambert

Senior Executive Pastry Chef
A prominent figure in the global pastry scene, Chef Nicolas Lambert is a French pastry artist with a distinguishable style, utilising a hero ingredient and complementing its flavours within a maximum of four textures. During his seven-year career with Four Seasons so far, Nicolas has received various honours for his culinary art, including the 2021 Hotel and Catering Pastry Chef Excellence Award by Relais Desserts International and being named the 2022 Pastry Chef of the Year by Gault & Millau UAE.

    Crisp kunafa layers embrace oozy cheese, finished with warm syrup and a crown of 22-karat gold leaf. The perfect complement? White truffle, smoked vanilla, verbena and citrus are composed like notes in quiet balance: delicate, fragrant, deeply harmonious.
