Nicolas Lambert

Senior Executive Pastry Chef
A prominent figure in the global pastry scene, Chef Nicolas Lambert is a French pastry artist with a distinguishable style, utilising a hero ingredient and complementing its flavours within a maximum of four textures. During his seven-year career with Four Seasons so far, Nicolas has received various honours for his culinary art, including the 2021 Hotel and Catering Pastry Chef Excellence Award by Relais Desserts International and being named the 2022 Pastry Chef of the Year by Gault & Millau UAE.

    Crisp kunafa layers embrace oozy cheese, finished with warm syrup and a crown of 22-karat gold leaf. The perfect complement? Velvety ashta ice cream made with milk and orange blossom and topped with golden caramelized pistachios.     Mosaic Afternoon Tea by Nicolas Lambert and Andrea Bonaffini

    Emerging between Four Seasons Resort Dubai at Jumeirah Beach and Four Seasons Hotel Bangkok at Chao Phraya River, Mosaic is an afternoon tea crafted as a harmonious composition of flavours and textures. This is where French pastry heritage meets Italian artisanal craft, inspired by the spirit of Dubai and the elegance of Bangkok. AED 420 per person including a glass of champagne; AED 260 per person including tea and coffee.
