Senior Executive Pastry Chef
A prominent figure in the global pastry scene, Chef Nicolas Lambert is a French pastry artist with a distinguishable style, utilising a hero ingredient and complementing its flavours within a maximum of four textures. During his seven-year career with Four Seasons so far, Nicolas has received various honours for his culinary art, including the 2021 Hotel and Catering Pastry Chef Excellence Award by Relais Desserts International and being named the 2022 Pastry Chef of the Year by Gault & Millau UAE.

    Experience Cupid’s Delight, a divine creation by Senior Executive Pastry Chef Nicolas Lambert featuring a layer of crunchy pistachio, a velvety mousse made with locally grown strawberries, a zesty yuzu crémeux and a soft pistachio biscuit. Served alongside a refreshing berry sorbet, his dessert blends sweet, earthy and citrus notes, promising a blissful treat for two. AED 180 with sharing cake for two for takeaway (orders must be made 24 hours in advance); AED 200 with sharing cake for two at Shai Salon; AED 600 with sharing cake for two and two glasses of Ruinart Rosé champagne.
