Inspired by the finest each season has to offer, Chef Bertrand Noeureuil creates sophisticated and contemporary compositions shaped by a refined sensibility. Flavours, textures, colours and temperatures evolve in step with nature, with each creation capturing the season’s unique character. This vision is echoed in the pastry creations of Pastry Chef Michael Bartocetti and is brought to life with expertise and delicacy by Meilleure Ouvrière de France Elsa Jeanvoine.

His menu is built around gestures, each one evoking a season: braising, roasting, grilling, infusing, extracting.
