Giovanni Speciale

Director of Food & Beverage and Culinary Operations

Hailing from Italy, Chef Giovanni pulls from his more than two decades of culinary expertise honed in award-winning kitchens around the world, including three Four Seasons kitchens across Asia. When he’s not overseeing all of the culinary operations at the Hotel, you can find Chef Gio practicing the martial art of tai chi or enjoying long walks through Singapore’s parks with his family.

    Mother’s Day Brunch at One-Ninety

    Choose from our signature seafood tower, salad bar and a spread of appetizers before indulging further with four live stations that serve dishes like mesquite-wood-roasted Peking duck carved à la minute and slow-roasted wagyu rump. Round up the celebration with handpicked cheeses and decadent desserts crafted by Pastry Chef Audrey Yee. Little ones can look forward to face-painting, balloon sculpting, bouncy castles and more at the Kids Playzone.
