Under Executive Chef Evan Neumann, whose career spans the kitchens of Joël Robuchon, Alain Ducasse, and Christophe Bellanca, the team transforms hyper-seasonal Napa Valley ingredients into seven extraordinary courses of contemporary American cuisine, refined through French technique with Mexican and Japanese influences. Evan Neumann

Executive Chef
Evan Neumann grew up surrounded by the markets, olive groves and culinary traditions of Provence, entering his first professional kitchen at 14 and training formally at the École Hôtelière d’Avignon. By 21, he was an Executive Chef, an achievement rarely seen at that age in French gastronomy. What followed was a decade forged in some of the most demanding kitchens in the world: under Joël Robuchon at the Hôtel Métropole Monte-Carlo, on the cooking and sauce stations at Alain Ducasse au Plaza Athénée in Paris, and as Sous Chef to Anne-Sophie Pic at La Dame de Pic – Le 1920 at Four Seasons Megève, where the restaurant earned its first Michelin star during his tenure. In New York, he served as Executive Sous Chef at Daniel Boulud’s Restaurant Daniel and joined Christophe Bellanca at Essential by Christophe as Chef de Cuisine, where under his leadership the restaurant earned a Michelin star. In total, Neumann has worked across kitchens holding a combined eleven Michelin stars.

Derek Stevenson

Sommelier
Derek Stevenson seeks to discover the great wines of California, particularly the greater Napa Valley area, with a special focus on the Calistoga region to support the community and celebrate the talented individuals who have invested their life's work in the dynamic wine industry. A graduate of the Culinary Institute of America at Hyde Park, Stevenson brings a food-first philosophy to wine pairing, curating a 750-label cellar with regional focuses on Napa Valley, Sonoma County, and California's many AVAs alongside exceptional global producers that elevate the restaurant's cuisine. That perspective contributed to Auro earning its first Michelin star in 2023, and under his guidance, Wine Spectator has recognized the wine program with three consecutive Best of Award of Excellence honors. A James Beard Award Semifinalist for Outstanding Professional in Beverage Service, Stevenson is also committed to championing diverse winemakers on the list and through community-building events at the Resort. Certified by the Court of Master Sommeliers at 23 and now pursuing the WSET Diploma, Stevenson is known for making wine approachable through precise, engaging storytelling that connects guests to the people behind each bottle.

Celine Plano brings a classically trained French sensibility to the pastry program at Four Seasons Napa Valley, guided by a simple principle: respect for the ingredients and a delicate hand make a truly great dessert. Born in Paris and formally trained in pastry, confectionary, chocolate, and ice-cream making in Bayonne, France, Chef Celine has spent more than 25 years refining her craft across some of America's most celebrated kitchens, including the Ritz Carlton Hotels in Atlanta and San Francisco, the Peninsula Hotel Chicago, and Four Seasons Hotel Westlake Village, where she first served as Executive Pastry Chef. Her expertise deepened further through a role as technical advisor and chocolatier instructor with Barry Callebaut, the world's largest chocolate manufacturer. Now rooted in Northern California wine country, Chef Celine brings that depth of experience to Auro and TRUSS, creating pastry programs that complement Auro's cuisine with precision, creativity, and an unwavering eye for detail — because in her kitchen, you make it nice or you make it twice.
