Chef Partner
A New Orleans resident for more than 20 years, chef Alon Shaya began his culinary career by studying at the esteemed Culinary Institute of America. He went on to work in Las Vegas, St. Louis and Italy before making New Orleans his home. He has since earned numerous James Beard Award nominations and wins. In 2018, he opened two new restaurants: Saba in New Orleans’ Uptown neighbourhood and Safta in Denver’s River North. In 2024, he went on to open SILA, in the heart of Atlantis Paradise Island Resort in the Bahamas, which pays homage to his Israeli heritage with its Mediterranean-inspired menu.

Glen Forman

Executive Sous Chef
Chef Glen Forman’s culinary journey began in his UCLA dorm, cooking for friends and exploring flavours. After time in Boston honing his skills with pizza and steaks, a brief stint in commercial photography in Minneapolis couldn’t keep him from the kitchen. He trained under four James Beard Award–winning chefs, which solidified his passion for cooking. Glen’s career flourished at Young Joni, known for its Korean and wood-fired cuisine, before he moved to New Orleans. In New Orleans, Glen served as sous chef at Saba and chef de cuisine at Josephine Estelle before reuniting with Chef Alon Shaya to join the Miss River team.
