Taste of the Rockies

Our beef is from a Colorado ranch, our lamb from the Rocky Mountains, our striped bass from Alamosa and much of our fruit from Colorado’s Rocky Ford Valley. At EDGE Restaurant, Executive Chef Simon Purvis’ hearty menus are filled with local flavours you won’t find anywhere else.
