CHARLES ZHANG
Executive Chinese ChefWith 26 years of experience in Chinese cuisine accumulated mainly in Shanghai and Hangzhou, Executive Chinese Chef Charles Zhang has learned the intricacies of the culinary style local to Jiangsu and Zhejiang provinces, known as Jiangzhe cuisine. He honed his craft over the years as the head Chinese chef at various luxury hotels, as well as in the kitchen of a Michelin-starred restaurant in Shanghai. His cooking philosophy revolves around maintaining the authentic foundation of the regional dishes he creates, including using local ingredients and finding innovative ways to unlock new flavour profiles. Most recently, Chef Zhang served as the Chinese chef at Jin Sha, the celebrated restaurant at Four Seasons Hotel Hangzhou at West Lake.
