Arnolfo at Four Seasons
Michelin-distinguished Chef Gaetano Trovato has partnered with Four Seasons Resort Maldives at Landaa Giravaaru to mentor the next generation of global chefs. Having earned his first Michelin distinction at 25, Trovato takes great pride in encouraging young professionals “to find their unique path and way of expressing themselves through food.” Sample his culinary magic, which marries Tuscan ingredients with Maldivian and island-grown products, in person twice a year or year-round via his on-site protégées, who will travel regularly to Trovato’s new Tuscan restaurant, Arnolfo The Frame, to further develop their own crafts and passions.
Fresh from their late 2022 visit, Chef Trovato’s on-site protégées are primed to deliver a new selection of intriguing offerings including aragosta – Baa lobster with Sicilian citrus and San Gimignano saffron – and all-time favourite, pigeon petto e coscia. Each dish is driven by the passion, purpose and food sustainability teachings of Trovato himself.

Chef Trovato is in residence twice a year. His next visit will be February 27 to March 5, during which his menu will be available to all dining patrons at Blu.
