Executive Chef Antonio Mermolia

Born and raised in Southern Italy to a long family line of chefs and hoteliers, Chef Antonio’s sprezzatura style of familiar classics is the embodiment of Lido. The inspiration is rooted in the culture of Southern Italy, where exceptional ingredients – mostly fish and vegetables – are respected and cooked to perfection without too much manipulation. His goal, he says, is for every dish to taste like your favourite childhood memory.
