Executive Chef
Born in Melbourne, Australia, Executive Chef Heath Gordon discovered his passion for cooking on the Gold Coast, where formal hospitality training led him into professional kitchens. His career spans Australia, the Middle East and Vietnam, with senior roles in Dubai, Abu Dhabi and Ho Chi Minh City, including leading restaurant openings and large-scale banqueting. Guided by a belief that food is about connection and joy, Chef Gordon draws inspiration from local produce and regional traditions to create thoughtful, flavour-driven dining experiences.

Dat Vo

Head Baker
Originally trained in engineering, Head Baker Dat Vo found his true calling in pastry, where precision meets creativity. After honing his craft in international kitchens in Phu Quoc, he developed a signature focus on chocolate artistry, blending technical skill with visual storytelling. Now Head Baker, Vo draws inspiration from Vietnamese heritage, reimagining familiar flavours and traditional sweets through a modern lens to create pastries that are both visually striking and deeply rooted in culture.
