Loay Ali
Executive ChefThroughout his journey, Chef Loay has worked alongside many professional chefs within Four Seasons, gaining invaluable experience and refining his craft. With more than 25 years in luxury five-star hotels, the majority of his career has been dedicated to Four Seasons Hotel Amman.

ANAS AL QUSAIRI
Executive Pastry ChefAnas Al Qusairi has been making life sweeter at Four Seasons Hotel Amman since 2008. Since 1993, he knew he wanted to be a chef, and he made his dream a reality. Anas makes a mean mohalabia, a traditional Middle Eastern milk pudding that is the perfect light dessert after a heavy meal. To balance his sweet side, his favourite condiment is hot sauce, and his guilty pleasure snack is pumpkin seeds. Naturally, his favourite cooking show is “Cake Boss.”
“Baking is fun, so when I bake, I love my surroundings to be bustling with energy. I prefer to work with music playing and in the company of lots of people.”
Khalid Ballout
Restaurants ChefKhalid Ballout started his career at Four Seasons Hotel Amman in 2012 at the position of Cook 3. His drive, passion and commitment led him to our signature brasserie, La Capitale, where he began as Junior Sous-Chef, learning from the French chef de cuisines that headed the restaurant. That catapulted him into the role of Sous-Chef, followed by Head Chef of La Capitale in 2021, Chef de Cuisine in 2022 and Restaurants Chef in 2025.

Patrick Caballero
Chef de Cuisine, SIRR Japanese LoungeChef Patrick, born and raised in Makati City, Philippines, is a dedicated Japanese specialty chef with many years of experience in esteemed establishments such as Nobu in Jeddah and luxury resorts in the Maldives and UAE, where he developed his solid expertise in Japanese cuisine and ingredient innovations.
