: Gulf Coast Oysters, Yuzu Chipotle Mignonette, Hibiscus Salt – Fresh-shucked Gulf oysters dressed with a citrus-chipotle yuzu mignonette, finished with a refreshing cucumber and micro herbs. Light, bright and saline-driven to awaken the palate.
Heirloom Tomato Salad, Burrata, Texas Peach, Basil Oil – Local heirloom tomatoes paired with creamy burrata, grilled Texas peaches, basil oil and aged balsamic.
Pan-Seared Gulf Red Snapper, Corn Purée, Shishito Pepper, Chimichurri – Perfectly seared red snapper served over sweet corn purée, charred shishito peppers and chimichurri sauce.
Texas Wagyu Striploin, Smoked Potato Purée, Charred Asparagus, Red Wine Reduction – Premium Texas wagyu cooked to perfection, paired with smoked potato purée, seasonal vegetables and rich jus.
Dessert – Dark Chocolate Cake, Chili Caramel, Candied Pecans, Crème Fraiche Ice Cream – Decadent chocolate balanced with subtle spice and nuttiness, elevating a classic Texas flavour profile.
