Executive Chef, IzumiGrowing up in the Kantō region of Honshu not far from Tokyo, Kato was inspired to cook by his uncle who operated an izakaya. Today, Kato leads our Hotel’s iconic rooftop restaurant Izumi, where he fashions Nikkei cuisine and sources as many local ingredients as possible, taking a farm-to-table and sustainable approach to every part of the menu.
