Across the Levant and the Arabian Peninsula, the fire was always the heart of the home or camp. Before electricity, every evening began around a source of heat and light, the oven (al forn), or the desert fire pit (majmar). Fire was used to transform grain into bread, wood into warmth, and strangers into companions. Around it coffee was roasted, tea was boiled, meals, songs and stories were shared. Al Forn as a restaurant name already carries the meaning of: “The place where the flame feeds both body and connection.” The evening begins in ember-light. Sparks drift like whispered invitations, and the air carries the scent of roasted fruit, smoke, and spice. The rhythm builds, laughter, music, and the pulse of drums rising with the heat. What begins as flame becomes flavour, char turned to sweetness, smoke softened by honey, warmth balanced by cool desert air. The story of Al Forn’s menu is the story of transformation, and how every gathering, like every fire, is special. Each drink is born from a different moment in the fire’s life: like the kindling, the first flicker, the dancing flames, the glowing heart, the smoke, the final ash.
