Garden to Table
Nevis is one of the special islands in the Caribbean that was formed through volcanic activity, resulting in the 3,232 ft.-tall Nevis Peak in the heart of the island. The fertile soil and lush surroundings are ideal for a variety of plants, trees and herbs to grow in abundance. The people of the island believe you must include the taste of Nevis into every dish for the perfect blend of flavours. Paying homage to the island’s lush herbs, fruits and vegetables, the Resort built a circular herb garden in the center of the property. The garden was created to introduce diners to the island’s natural provisions and culinary culture, bringing them closer to the natural surroundings.

There are many different types of seasonal herbs and vegetables that grow in the garden, including red spinach, lemongrass, radishes, okra, basil, thyme, tomatoes and Scotch Bonnet peppers, which are used in Chef Sam’s and Chef Llewellyn’s fiery hot pepper sauce. All these provisions are picked at the peak of freshness to be used across all eight Resort bars and restaurant menus.
