No longer limited to blini and cr\u00e8me fra\u00eeche, fish roe now tops&nbsp;everything from amuse-bouches&nbsp;to desserts. \u201cIt\u2019s become less fussy than it used to be,\u201d says Sarah Meyer, the former Hollywood producer who&nbsp;founded Los&nbsp;Angeles\u2013based <a href=\"https:\/\/roecaviar.com\/\">Roe Caviar<\/a>. \u201cIt\u2019s&nbsp;really fun&nbsp;to serve it with potato chips or on a lobster roll. At San Francisco\u2019s&nbsp;<a href=\"https:\/\/zandypekingduck.com\/\">Z&nbsp;&amp; Y Peking Duck<\/a>, the traditional Beijing Peking duck is paired with&nbsp;<a href=\"https:\/\/www.regiisova.com\/store\">Regiis&nbsp;Ova Caviar<\/a> (co-founded by chef Thomas Keller and caviar expert Shaoching Bishop), a 12-year-old roe with buttery and nutty flavours, cured for anywhere from three to 12 months. Los Angeles\u2019s <a href=\"https:\/\/www.verse.la\/\">Verse<\/a> restaurant puts caviar on cheesecake, while&nbsp;<a href=\"https:\/\/www.uoichibahandroll.com\/\">Uoichiba<\/a>, also in L.A., offers a dollop of Astrea caviar atop its Monaca ice cream sandwich featuring salted yuzu sorbet and cheesecake.&nbsp;&nbsp;<\/p>\n\n\n\n<p>Caviar could be paired with&nbsp;almost anything. At <a href=\"https:\/\/www.fourseasons.com\/surfside\/\">Four Seasons Hotel at the Surf Club, Surfside, Florida<\/a>, sommelier Christian Zaffarano loves pairing caviar from N25 Caviar with Laurent-Perrier Grand Si\u00e8cle No. 26 Champagne. \u201cThe acidity and minerality keep your palate fresh after every salty, briny bite,\u201d he says. And at Four Seasons Hotel Los Angeles at Beverly Hills, guests at the&nbsp;speakeasy-style <a href=\"https:\/\/www.fourseasons.com\/losangeles\/dining\/lounges\/the_lounge\/\">Veil &amp; Velvet<\/a> lounge use a playful \u201cPress for Caviar\u201d button to summon tableside service of <a href=\"https:\/\/theonlycaviar.com\/\">The Only Caviar<\/a> (actor Aaron Paul\u2019s caviar brand). The purest way to consume the delicate fish roe is with little \u201cbumps\u201d served straight from the tin to the back of the hand, allowing the caviar to warm slightly before it\u2019s enjoyed.
