Recently named the World\u2019s Best Female Chef by the World\u2019s 50 Best Restaurants, she is the first Asian chef to win the title\u2014the latest of many accolades she has earned since winning Les Disciples d\u2019Escoffier\u2019s Asia Youth Hope Cooking award in 2011.<\/p>\n\n\n\n<p>Raised in Bangkok with Thai, Chinese, and Australian heritage, Chef Pam studied at the Culinary Institute of America, then honed her budding talent at Jean-Georges, the New York City flagship of chef Jean-Georges Vongerichten. Photograph by DOF Sky\/Ground.<\/figcaption><\/figure>\n\n\n\n<p>It\u2019s a lesson she\u2019s applied to her growing empire of Bangkok restaurants, comprising <a href=\"https:\/\/www.restaurantpotong.com\/\">Potong<\/a>\u2014No. 13 on the World\u2019s 50 Best Restaurants 2025 list\u2014which she opened in 2019 in the building that had been her family\u2019s century-old pharmacy; <a href=\"https:\/\/www.opiumbarbangkok.com\/\">Opium<\/a>, a hidden bar in the same building; <a href=\"https:\/\/www.khaosansek.com\/\">Khao San Sek,<\/a> a casual Thai eatery; Tora, a Japanese izakaya; <a href=\"https:\/\/www.bychefpam.com\/smoked\">Smoked<\/a>, for Texas-style barbecue; <a href=\"https:\/\/www.instagram.com\/lacopita.bkk\/\">La Copita<\/a>, a new agave bar; and her latest, <a href=\"https:\/\/www.thexprojectbkk.com\/restaurants\/project-one-f5w4d-a6s9a-wc2sh-xkks5-jxezt-nlesj-pklb2-5he55\">Ra-O<\/a>, a reimagined Thai grill. Photograph by Chris Shalkx.<\/figcaption><\/figure>\n\n\n\n<p><strong>Sai Nam Phueng Noodle Shop:<\/strong> \u201c<a href=\"https:\/\/guide.michelin.com\/us\/en\/bangkok-region\/bangkok\/restaurant\/guay-tiew-mu-rung-rueang\">Rung Rueang<\/a> is my favourite noodle place, but everyone knows about it and it\u2019s always busy. The other noodle place I love, Sai Nam Phueng, is very underrated and not as well known. It\u2019s a simple, family-run place where everything is done well, especially noodles with stewed chicken wings. It\u2019s addictive. I always have three bowls.\u201d<\/p>\n\n\n\n<p><strong><a href=\"https:\/\/www.nusarabkk.com\/\">Nusara<\/a><\/strong>: \u201cMy favourite Thai restaurant is right across from Wat Pho, and when you dine, you\u2019re looking out onto the temple illuminated beautifully at night. Photograph by Norbert Braun\/Unsplash.<\/figcaption><\/figure>\n\n\n\n<p><strong>Damnoen Saduak Floating Market:<\/strong> The famous floating market, just southwest of Bangkok, has become a huge tourist attraction, but Chef Pam recommends visiting if you want &#8220;to see how things were&#8230;when they [traded] on the canal.&#8221;<\/p>\n<\/div><\/div>\n\n\n\n<p><strong>Song Wat Road: <\/strong>\u201cThis up-and-coming area in Chinatown, very close to Potong, has a lot of history. Centuries ago, it\u2019s where boats and ships came to trade their goods. Today, the area has become very hip because a new generation that appreciates the history has converted old warehouses into caf\u00e9s, galleries, and shops. Locals and tourists who appreciate the culture and heritage are coming. People don\u2019t want to go to malls anymore; they want to see local coffee roasters and local chocolatiers. There\u2019s a strong neighbourhood vibe\u2014Song Wat was just named [one of] the coolest communities in the world.\u201d<\/p>\n\n\n\n<p><strong>Koh Kret:<\/strong> \u201cWhen someone visits me and wants to do something new, I take them to Koh Kret, a tiny island an hour from Bangkok, where they specialize in clay pottery and speak their own language. A one-minute boat ride across the river, it\u2019s like a country within Thailand. I feel the warmth. I love BKK Social Club, where [beverage manager] Philip Bischoff is so welcoming; he\u2019s become a good friend. He comes to our bars, and I go to his. I don\u2019t place an order\u2014I have whatever he mixes for me. And Cafe Madeleine is also amazing: [executive pastry chef] Andrea Bonaffini\u2019s pastries taste as good as they look.\u201d <\/p>\n\n\n\n<div class=\"wp-block-group property-commerce-box\"><div
