Now head sommelier at the Michelin-starred <a href=\"http:\/\/www.fourseasons.com\/paris\/dining\/restaurants\/le_george\/\" target=\"_blank\" rel=\"noopener noreferrer\">Le George<\/a> restaurant at <a href=\"http:\/\/www.fourseasons.com\/paris\/\" target=\"_blank\" rel=\"noopener noreferrer\">Four Seasons Hotel George V, Paris<\/a>, Del Carlo loves showing guests around the Hotel\u2019s 50,000-bottle-deep wine cellar. \u201cIt\u2019s 45 feet below ground and a perfect playground for any wine lover,\u201d he says.<\/p>\n<p>His favourite tipples include Mersault Charmes 2012, paired with Burgundy-style snails: \u201cThe herbal touch and intensity of the Chardonnay will perfectly balance the heavy flavours of garlic and parsley.\u201d Del Carlo also recommends drinking Champagne <em>in<\/em> Champagne \u2013 and adores the behind-the-scenes tour at <a href=\"https:\/\/www.krug.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">Krug<\/a> vineyards. \u201cReims is just an hour and a half from Paris by train,\u201d he says, \u201cand there\u2019s nothing more enchanting than sipping a glass of Champagne facing the imposing circa 1211 Reims cathedral.\u201d<\/p>\n<\/p><\/div>\n<\/div>\n<div id=\"immersive_panel_11\" class=\"body-block body-cta large-body-media body-block-cta-small-body\">\n<div class=\"body-cta-container\">\n<div class=\"cta-text-container\">\n<h3>Four Seasons Hotel George V, Paris<\/h3>\n<\/p><\/div>\n<div class=\"cta-btn-container\">\n            <a href=\"http:\/\/www.fourseasons.com\/paris\/\" class=\"btn btn-primary btn-small\">Check Rates &#038; Among his favourite wineries: <a href=\"http:\/\/www.castellodiama.com\/en\/\" target=\"_blank\" rel=\"noopener noreferrer\">Castello di Ama<\/a>, which was founded in the 1970s in a 12th-century town in the Chianti hills.<\/p>\n<p>\u201cThey were among the first to plant Merlot grapes in Chianti, and it\u2019s an amazing place to visit because they\u2019re passionate about contemporary art, too,\u201d Meccia says. (Anish Kapoor, Louise Bourgeois and Hiroshi Sugimoto have all had their work featured on the estate.) \u201cBe sure to have lunch or dinner in their recently opened restaurant, where real Tuscan food is prepared by cooks that once made meals for the family.\u201d Don\u2019t miss a glass \u2013 or a case \u2013 of their L\u2019Apparita wine. \u201cIt was Tuscany\u2019s first pure Merlot and has had
