The MonakaInspired by traditional Japanese wagashi, this cocktail brings together white vodka and Tamagawa sake from Kinoshita Brewery in Kyotango. A delicate monaka wafer, topped with cherry blossom–infused white bean paste, completes this refined and distinctly seasonal creation.
OyasumiA dessert cocktail crafted with Okinawan rum, layered with rich black sesame, silky egg white and the tropical notes of mango. Finished with a delicately torched brown sugar crust, it reveals a harmonious balance of flavour and texture – an indulgent way to close the evening.
Gyu Katsu SandoA signature Gyu Katsu Sandwich featuring a 200-gram cut of premium Wagyu, delicately cooked and layered in soft milk bread. Juicy and refined in flavour, it offers a simple yet impactful taste – an expression of Kyoto’s rich beef culture and a chef’s recommended specialty.
