Though known for its deserts and mountains, Arizona is also fertile ground for flavourful, eclectic cuisine. Our Executive Chef draws on his expertise in French culinary tradition and the fresh, flavourful spices and ingredients of the Southwest. Capitalising on the bounty of local growers, menus may feature ingredients such as heirloom tomatoes, Black Mesa Ranch goat cheese, Arizona grass-fed beef, Queen Creek olive oil and natural Sonoran Desert honey.

When designing your wedding menu, you may choose from our extensive array of innovative menus, or we can create a custom menu to suit your preferences. Personal elements, like grilled steak branded with the couple's initials, add a charming touch that your guests will cherish long after your wedding is over. Or we can create a menu that encompasses a personalised theme. Menus created around the couple's family recipes, favourite dishes or travel destinations are memorable ways to express your gratitude and love.

We can also offer menus that reflect a particular cuisine or cultural tradition. Our culinary team is expertly trained in preparing authentic plated or buffet-style regional northern or southern Indian cuisine, as well as kosher-style menus.

Service

For your wedding, we offer the unique option of elegant tableside silver service. Or you may opt for buffet service revived with engaging interactive chef stations that feature creative and tantalising dishes. A taco bar with handmade fresh, hot tortillas is a fun and entertaining way to sample the flavours of the Southwest. A ceviche bar or sushi station featuring authentic hand-rolled specialties is another fresh and stylish option.

Beverages

Custom-designed beverages offer another opportunity to add your signature to your wedding. Whether it's a favourite cocktail, a punch to match your wedding colours, his and hers martinis or beverages personalised with your names, you can create drinks your guests will remember as delicious details. For something uniquely Southwestern, prickly pear nectar can be used to transform margaritas and other cocktails into fun, pretty pink drinks.

After-party

When the celebration extends late into the evening, guests will be sustained by butler-passed sweet or savoury items. An espresso station is sure to restore waning energy, while slider and chip stations, a taco bar, mini milk shakes, cold-stone ice cream or dessert bars will keep guests nourished and happy as the DJ plays on.

Cakes and other desserts

Our catering team creates spectacular wedding cakes, turning your vision into reality, often starting with an idea – a sketch, photo, colour scheme or even a swatch of the wedding dress can provide inspiration for these masterful creations. Our Pastry Chef will work with you to select the cake flavour and filling that will please your palate and impress your guests. You may choose from an extensive menu of popular cakes, or we can create a customised cake that complements your wedding theme or incorporates personal elements into the design.
