Sous-Chef Travis Cintron at Four Seasons Hotel San Francisco

Sous-Chef Travis Cintron has been a food enthusiast his entire life. As a child, he began cooking traditional Danish foods in his grandmother’s kitchen. “As a kid, I was amazed by my grandmother’s cooking. From different types of pickled herring to gravlax, frikadeller (Danish meatballs), pâté and harvesting fresh vegetables from her backyard garden – she always knew what to do,” reminisces Cintron.

 

After graduating from the City College of San Francisco’s Culinary Arts and Hospitality Studies program, Cintron embarked on a diverse culinary career, working with a number of San Francisco’s greatest chefs, including Roland Passot, George Morrone, Nancy Oakes and Mitchell Rosenthal.

 

Cintron joined Four Seasons Hotel San Francisco in 2012 and loves the diversity the Hotel offers. “I really enjoy the fact that you can work all over the world, and I love that I’m surrounded by people with a wide range of backgrounds and experiences. It is a great opportunity to learn and grow,” Cintron says. A Bay Area native, he lives by the region’s commitment to fresh, locally grown, seasonal ingredients. He welcomes each season with open arms, although summer remains his favourite.

 

Cintron still cooks with his grandmother today. “I’ve asked my grandmother for her recipes and even though I’m now a professional chef, she still pretends to not hear me. I’ve tried to re-create her dishes, but they never taste the same. I guess she has that grandmother touch,” laughs Cintron. When he isn’t at the Hotel, or re-creating Danish dishes, he can be found throwing dinner parties – such as his famous “mac ’n’ cheese” events – working on carpentry or listening to live music in the Bay Area.
