These vegetarian, made-from-scratch dishes are prepared for guests on request using dedicated pans, pots, knives and chopping boards.
The principles of Jainism require extreme respect for all living things, meaning that meat, eggs, seafood, fungi and root vegetables are off the menu. (Even fermented food, or food stored overnight, is prohibited, due to the higher concentration of microorganisms compared to food that is prepared and consumed within a day.) For this reason, Jain food is always ultra-fresh. Sattvic cuisine doesn’t allow meats, seafood, garlic or onion, but instead focuses on unrefined ingredients that are considered calming and strengthening. Sattvic food is prepared with love and awareness, so that the chef transmits pure, positive energy to each dish. “It takes patience, but to devise and prepare delicious and imaginative dishes using only healthy greens and vegetables is a beautiful thing to do,” notes Chef Kapil Sharma.
In the Dhivehi language, “Baraabaru” means “excellent” – which will surely refer to both your dining experience and your state of mind as you sample this out-of-the-ordinary, authentic fare in a dramatically beautiful seaside setting.
