    MEET MAURIZIO FERRARESE

    Maurizio Ferrarese joined the Four Seasons team at Quattro Restaurant in 2010 as the Executive Chef. Chef Ferrarese enjoys spending time at Plant It Forward Farms, finding inspiration and fresh produce for Quattro’s seasonally changing menu. Here are some of his favourite finds and how he incorporates them into his creative dishes.

     

  • The Plant It Forward Salad

    “I love being able to be creative with my salads and incorporate the freshest ingredients. This salad, offered at lunch and dinner at Quattro, is always changing to include the newest produce from Plant It Forward Farms. Showing off the seasonality and freshness of the produce offered at the farms, the salad has included items such as red radicchio, baby spinach, baby carrots, baby beets and fresh herbs.”

     

  • Sunday Brunch Crepes

    “Among the many stations offered at our Quattro Sunday Brunch, the crepe station is the most popular! Guy, one of our chefs and a local farmer from Plant It Forward Farms, runs the station and creates customized crepes for our guests using the local produce he planted. There’s nothing better than a fresh crepe with produce from the farm.”

     

  • The Farmers Menu

    “Our in-house catering has unique offerings for groups and events, including a customized menu featuring local farm produce. The Farmers Menu includes a personalized menu handcrafted by the chef and client that includes seasonal produce and farmers market finds. From salads to soups and entrees, the options are endless.”

     

  • Outside Catering

    “Having such a great relationship with Plant It Forward Farms has its perks. We were invited to the farm to provide our outside catering, which was an incredible experience. Our team created dishes with freshly picked produce for over 40 people. We prepared delicious items such as a beet salad, cucumber sandwiches, devilled eggs and short ribs, incorporating farm fresh vegetables, produce and herbs.”
