Fresh Flavours with Executive Chef, Mario Alcocer

Being a five-star chef often requires a bit of a nomadic life, working and creating in locations far from your hometown. So for our Executive Chef Mario Alcocer – who boasts a 23-year tenure honing his craft in two Four Seasons properties in California – just being in a Latin American country again, even if it’s even more southerly than his native Mexico City, feels like a piece of home. “To be based in a Latin American country is very refreshing for me!” says Chef Mario with a smile. “The Latin culture and flavour is in my genes.”

 

That flavour and culture pairs beautifully with the cuisine at the Resort’s five restaurants and lounges, which emphasize delicious Latin fare, and local seafood and organic fruits and vegetables. Chef Mario and his culinary team work hard at nurturing relationships with local producers. “The network of reliable producers was well developed when I arrived,” he notes. “I’m just looking to grow it even more.” Tropical fruit is “outrageously fresh and natural” he says, with Costa Rican star fruit a particular standout. Other local highlights include an impressive variety of microgreens, premium beef that in his estimation is quite comparable to Kobe, and a Resort program where guests can choose their own seafood from fishermen right on the beach, to be prepared their favourite way in Chef Mario’s kitchen.


Outside the kitchen, Chef Mario, a married father of three, savours the pura vida of Costa Rica. His especial passion: mountain biking. “Before I even signed up to come here, I wanted to know how many mountain biking trails there were in Costa Rica!” he remembers. It’s just another way to feel at home in his new hometown.
