Founded by Michael Mina and Ken Tominaga of Hana Sushi, PABU is modelled on traditional Japanese drinking establishments and takes it name from the Japanese phonetic translation of “pub.” We honour this inspiration with an extensive beverage menu featuring Asian beers and wines, Asian-inspired cocktails, and a list of more than 100 sakes curated by Master Sake Sommelier Tiffany Dawn Soto. Sushi Rolling 101

Have you ever wanted to learn how to roll sushi like a pro? Take a sushi rolling class with PABU’s experts, Executive Chef Jonah Kim and Sushi Chef Yoji Harada. Class participants will be introduced to the fine art of making sushi, from how to correctly cut the fish to a hands-on demonstration of how to roll. Sake 101
Led by PABU Master Sake Sommelier Tiffany Soto, each Sake 101 class is an hour-long interactive tasting of five sakes that will explore various flavour profiles and illustrate the diversity within the genre. With every sip, guests will learn about the libation’s history and brewing process, the meanings behind different grade designations, and how production regions affect taste. Conversation will also delve into the benefits of drinking sake (including its low calorie count) and tips for easily navigating a sake menu in the future. Tatami Table Dinners

PABU Izakaya will be hosting a series of Tatami Table Dinners, private dining adventures during which Chef Jonah Kim will take gourmands and novices on a culinary journey unlike any other. Named for PABU’s private dining room, each Tatami Table Dinner will focus on one aspect of Japanese cuisine, such as a seasonal ingredient, a traditional holiday meal or a cooking technique. Sourcing from only the best purveyors both locally and abroad allows Chef Jonah to present a distinguished menu for the most discriminating palates. Diners will also be offered an optional beverage pairing with the meal, hand selected by PABU Izakaya’s own Master Sake Sommelier Tiffany Soto. Dinners are USD 89 per person, plus tax and gratuity. PABU features an updated take on the Japanese izakaya, a comfortable place to relax with a drink and a light bite.
